In the villages nestled between Crete’s commanding mountains, people purposely ignore the pace
of modern life.  They grow and grind their own wheat to make bread, cultivate their own crops and
raise their own livestock.  Residents also take advantage of the abundance of wild, edible plants
like artichokes, oregano, fennel, purslane and chamomile.  The roots of the Mediterranean Diet
originated in the rural communities in Crete, but the Cretan Diet is not a diet…it’s a way of life.   

In a small group setting, we'll meet knowledgeable and dedicated preservationists of Crete's
culture, nature and cuisine.  Preservation of such traditions is a crucial key to protecting our safe
food sources and environment today.  To be part of the solution, we can choose to learn from our
world's practitioners of preservation, directly support their work, and become practitioners
ourselves.

During CCS seminars we'll stay in very simple, locally owned rural lodging.  Ancient sites,
Byzantine monasteries, gorgeous canyons and beaches abound.  We'll also make time to relax
and savor the pace of life on this magnificent island.
